Morning After Crepe Party
I know I’m officially old because I have more fun the morning after a big night out than during the night itself. A couple of friends from Santa Clara came up to the city for some “night-crawling” and ended up crashing on sofas in the neighborhood, and when we all woke up around 10 o’clock, brunch was on the mind.
I had a serious craving for crêpes and headed to the grocery store for crêpe mix, which I assumed would be something like pancake mix. Turns out, it doesn’t exist — or at least not at my Safeway. So I found a recipe on my trust Epicurious iPhone app, which only occasionally leads me astray.
DIY Crêpes
Ingredients (via Epicurious):
1 cup plus 2 tbsp whole milk
2 large eggs
1 cup all-purpose flour
2 tbsp sugar
3 tablespoons plus 1 teaspoon unsalted butter, melted and cooled slightly
1/4 tsp salt
1/2 tsp vanilla (my addition)
Blend milk, eggs, flour, granulated sugar, 2 tablespoons butter, and salt in a blender, scraping down side once or twice, until batter is smooth, about 1 minute. Let batter stand at room temperature 1 hour (this prevents tough crêpes).
So, I naturally didn’t have an hour to let it stand, but they turned out fine anyway. We buttered a large skillet and made the crepes continuously — just watch them and flip like pancakes — and set out an array of goodies to choose from: Nutella, sliced banana, different jams (blackberry and four fruits preserves), honey and some powdered sugar for dusting.
The Nutella and banana were by far the preferred toppings. If I did another crêpe party, I’d maybe saute some sliced apples or pears and peanut butter as well, or even branch out into savory ones — swiss cheese, egg and prosciutto would be a big hit!
