Dinner for Two: Racking the Pantry

Now that I’ve started cooking more, the contents of my pantry and refrigerator are slowly multiplying, and I started thinking it was time to use some leftovers for a good cause. An old box of instant couscous caught my eye since I’d never cooked it before, as did half of last week’s butternut squash. 

I cheated and went to the store for a couple more ingredients — after all, it needed some meat to make a real meal in my assistant’s eyes. I picked up some asparagus and prosciutto and threw together this little creation, which only took me about 10 minutes and actually turned out to be delicious. 

Lemony Couscous with Butternut Squash, Asparagus and Prosciutto

Ingredients:

1 box plain instant couscous

1.5 cups butternut squash, cut in small cubes

4 stalks asparagus, chopped

4 wide slices prosciutto, chopped

Juice of 1 lemon

3 tbsp olive oil

1 tsp cumin

1/2 tsp paprika

1/4 cup parmesan cheese, shredded

In large skillet, combine 1 tbsp olive oil, asparagus, squash and prosciutto. Sauté for 10 minutes. While meat and vegetables cook, prepare couscous according to package instructions. In small bowl, combine remaining 2 tbsp olive oil with lemon juice, cumin and paprika. Mix well. When couscous is finished cooking, pour lemon juice mixture on top and stir well. Remove prosciutto and vegetables from heat and add to couscous, mixing all ingredients together. Add salt and pepper to taste, and top with cheese.
